Today I had a Mediterranean veggie wrap!!! :) I have these jalapeño cilantro wraps which I put this herbed white bean spread all over (look into chef chloe she has awesome recipes) and I add tons of roasted red pepper and sundried tomato, and top that off with some lettuce of some sort!!! Yum so good! If you're feeling extra guilty you could add a side of veggie chips!! :)

Trying e veggie pattie for the first time..hoping it tastes good. Eating that with mesculan salad with tomatoes and apple cider vine dressing.....

...had leftover udon noodles from Kind Life udon fried noodles recipe I made the other day...(for some reason I made the entire box, and only needed about half)... so today I googled Udon noodles Vegan and found a yummy recipe for udon noodles and peanut sauce (skipped the seiten part) http://www.cooks.com/rec/view/0,1968,136163-226201,00.html Best part was I had most all ingredients on hand...and substituted others. Came out excellent !! Luv that!

Had a baked potato w/ a little Earth balance and S/P. Spinach salad w/ white beans, & sunflower seeds. Simple but good:)

Had a Boca Burger with guac, red onion, lettuce, veggie cheese, toasted Bun and baked swwet potato fries! Yummy!!

i had kalamata olive/rosemary whole wheat bread with mashed avocado mixed with arugula, pickles, and cherry tomatoes. weird and good!

Mistcat- I bought that cookbook about a month ago and have not tried the recipes yet. I'm happy to hear they are so good! Moosewood Restaurant (Ithaca, NY) Cooks at Home is another great cookbook for vegans and vegetarians!

I had butternut squash ravioli (from Trader Joe's), Raspberry soy yogurt, Grapefruit & last but not least Vita Coco Water with Peach & Mango...Mmm!

I browned some seitan with sea salt and pepper, then cooled it next I added diced onions, some parsley, curly springs of fennel, cut up romaine lettuce and veganaise mixed it up and yum yum seitan salad and 2 homemade vegan cookies for dessert with green tea. This is great!!!

I had leftover basmati rice with raisins and apricots. I also had broccoli florets with hummus. I felt like something sweet afterward so I had a soy mini "icecream" sandwich. Yummy!
