Brown rice with a dash of Braggs Aminos. Topped with lentils. Topped with brussel sprouts chopped fine and sauted with garlic, olive oil, and a little black pepper, cayenne pepper, and garlic. It was delish!!!
I enjoyed leftover spinach strata from last nite. Made from dried diced onions mixed into some E-Beater's eggs, w/ spinach, nutritional yeast, organic soy bacon bits, thin potatoe pieces and some hot sauce. YUM!!! Served with peach slices and 1 piece Ezekial 7 grain bread lightly toasted and topped with natural peach jam. Also my wonderful coffee flavored just the right vanilla w/ a dash of stevia. Nothing like this can be bought...:)
I had cast iron pan warmed leftover garbanzo beans,black rice,quinoa with avocado,kale and spinach,with half an avocado and Gomasio sea salt sesame seeds,with olive oil and basil pesto.For desert I had a raw cherry energy bar,which had oats,cherries,cashew butter,dates,agave,and cherries.yummer.

My dessert was Alicia's -My Favourite Cupcakes- I made with choco topping. very yummie ... my first successful vegan cupcake <3
I made delicious tacos-sprouted corn tortillas,azuki beans,kale,avocado,gomasion sea salt,butternut squash,with a big salad and quinoa.Oh my delicious! for dessert I had a date.
I made delicious light salted toasted nuts and legumes mixed with sweet raisins a tasty snack mix that you can also easily make at home. I came across this idea on the http://www.sheffafoods.com/products/tasty-snack-mix/, where I found many more recipes as well, but this is really very interesting and easy to make.
Chop a nuts with the skin and mix it with freshly grated coconut. Deseed the green chili, finely chop and add it to the coconut, raisins mixture. Sprinkle with salt. For the tempering– heat oil in a little pan and add the mustard seeds and legumes. When it starts to boil, add the curry leaves. Turn off the heat and pour it over the snack.
I put lentils, carrots, sweet potato, browned onion, and spinach in the crock pot with curry seasoning and let the whole thing stew all day the other day... I've been enjoying my curried lentil stew for lunch! I love slow cooking lentils with veggies!!! Mmmm!
