Stuffed acorn squash

I made the best meal for dinner the other night.


Prepare two cups of barley according to pkg directions.


Cut open an acorn squash, scoop out the seeds. Put on a microwave safe plate and cover, microwave about 8 minutes until soft.


Saute some garlic, onion, carrots, red bell pepper in olive oil. Put into a mixing bowl.


Saute 1 chopped apple in Earth Balance. Add 1 TBSP of maple syrup.


Scoop some of the flesh out of the acorn squash and mash up. Add the veggies, apple & squash together. Add the barley to this mixture. Stuff the acorn squash.


I then prepared a corn bread stufifng and put that on top. Put back into the oven and cook for 10 minutes.


The savory stuffing with the slightly sweet veggies and chewy barley was such a good compliment. The leftovers were even better!
