I've been a non meat eater for decades...yet never moved on to ending my relationship with cheese, milk and fish! Can't do them all at once but I am working on the cheese and milk. Any brands of cheese that you feel is yummy?? I haven't met one yet that I love. Any replacements for eggs?
A lot of people have found that it is better to give cheese up altogether rather than try to replace it, at least at first. No replacement is going to be the same. Once your taste buds change, you can try the faux stuff if you want and might find it better. One that has had good reviews - Daiya. It's really only good melted, though. Be aware that most cheese alternatives have casein, so if you want to try different ones you want to look for ones that are labeled vegan.
As far as eggs - for baking or for eating? For baking you can sub ground flax, though I don't know ratios. For eating, you can make tofu scramble with anything you want and it always comes out so good!
Oh, milk - for creamer you can try So Delicious Coconut Creamer. Try milk subs - coconut milk, rice, soy, hazelnut, oat, hemp. You're bound to find one you like!
Hazel you rock. The milk seem easier I have enjoyed the choices, Im going to try that creamer, sounds yum! thanks for the tips
Hazel is right! No fake cheese is going to make your taste buds happy if you're still eating dairy cheese. It's best to give up eating cheese for at least a month before you start trying fake cheeses. Having said that, Dr. Cow Tree Nut Cheeses are wonderful artisan-like vegan cheeses, Daiya Mozzarella and Cheddar cheeses are very melty and delicious for making pizzas and enchiladas. So Delicious Original Coconut Milk Beverage is the best-tasting dairy-free milk beverage I've ever tried, and again, I have to agree with Hazel on the So Delicious Coconut Milk Creamer. The French Vanilla makes a wickedly delicious cup of chai tea.
The book Vegan Brunch contains fantastic recipes for egg dishes like frittatas, quiche, omelets, scrambled tofu--there's even a recipe for Tofu Benedict! If you want to substitute something for eggs in your cooking and baking, there's a wonderful products called Egg Replacer, and depending on what role the eggs play in a particular dish, there's a full list of alternatives here: http://www.peta.org/living/vegetarian-living/egg-replacements.aspx
Thanks Eliza, I will have to pick up the Vegan Brunch. Sunday breakfast is one of the things I miss the most, but don't want to eat eggs at all. I have been vegan for a few months and have no desire to eat them. Love Daiya cheese, cheddar for grilled cheese (with tomatoes) and Motzarella for pizza and pasta dishes. My favorite vegan place in Akron uses the same cheese and all of their dishes are so good!
You guys are very helpful. I am looking forward to the creamer.
Check out my blog. I have a list of suggestions for vegan substitutions for common food items. :) Hopefully it will help you. It's under the recipe and cooking page.
Kind Regards, Jenna (my blog = www.theplantrx.com)
