Does anyone have a vegan fudge recipe they could share? I want to end up with that really dense, holiday fudge. I tried the following recipe, but it never set up--it just stayed basically in batter form (not that that isn't tasty, but not what I'm going for at my holiday party where I'm trying to serve all vegan treats).

Unsuccessful recipe:1 cup vegan chocolate chips(e.g. Trader Joe's) OR 8.5oz sweetened dark chocolate4oz natural vegan butter substitute(e.g. Earth Balance)1/2 cup powdered sugar1/4 cup non-dairy milkMany thanks, and happy holidays!

I haven't made this, but here is one I found online that I'm going to try.

Vegan Lunch Box has a recipe that looks good.

4 c powdered sugar

1/2 c cocoa powder

1/2 c chocolate chips

1/2 c non dairy milk

2 tbsp. vegan butter

1 1/2 tsp. vanilla

1 c vegan marshmallow bits or 1/2 c vegan marshmallow fluff (optional)

1/2 c chopped nuts (optional)

Spray a 9x9 baking pan. In a large bowl sift together the powdered sugar and cocoa, add chips, set aside. In a saucepan, heat 'milk' and 'butter' to a boil, stirring constantly.

Pour the hot milk over the choc chips and stir well with a wooden spoon until well combined. Stir in vanilla, marshmallows, nuts. Spread into pan and chill for at least a day to solidify.

I have not tried this recipe but I cook a lot and it looks good to me. Her recipes have never failed me to date. :o)

Nigella Lawson has a great recipe on her site: http://www.nigella.com/recipes/view/chocolate-pistachio-fudge-96. You can get vegan condensed milk at the Vegan Store http://www.veganstore.com/vegan-condensed-milk/Page_1/973c.html. Good luck!

Thanks very much.

Heather: I had no idea there was such a thing as vegan condensed milk available. I really think that's the key ingredient. I just ordered some from the link you provided (it wasn't cheap--but, hey, this is fudge we're talking about, a treat without which Christmas just isn't really Christmas).

I'll let you know how it turns out.

I tried Nigella's recipe using the soy condensed milk - and I had the same problem. The fudge won't set up. It ends up the consistency of thick icing instead of fudge. I'm wondering if vegan fudge just won't set up right? Gah, so disappointing. My party is in five days. Any other recipes?

Thanks to all who have tried to help!

The Vegan Lunch Box recipe does look promising, but here's my mom's recipe:

2 c. sugar

1/3 c. cocoa

1 can evaporated milk or whole milk (I'm guessing we could use soy condensed here?)

pinch of salt

add all ingredients to a large pan

heat on high stirring all the time so the milk doesn't burn

when it boils, turn it down to medium low

stir occasionally, but do not scrape sides

fill the sink with water and ice

cook to soft ball stage (10 to 20 minutes)--drop a scoop into ice water (236 degrees)

if you cook it too much, it will be hard

take the pot off the heat and put the pan into the ice water in the sink--do not stir

add 1 tsp. vanilla + 3 tbsp. butter (Earth Balance)

cool and do not stir

when it it is cool to the touch, beat with a hand mixer until no longer glossy

pour the fudge into a square buttered 8x8 pan

refrigerate until set.

I haven't made this vegan or traditional, but my mom makes it every year and it's delicious. She dictated the recipe to me. Good luck and please post your results.

Has anyone tried to use coconut milk? Maybe that would give you the consistency you need? If coconut milk doesn't work, I would try to use the thick coconut cream by refrigerating the can and using the cream on the top of the can. Good luck!
