Vegan fudge recipe?

Success! I found a recipe that delivers just the consistency I was looking for. Thanks for all your input, and happy holiday baking.



Chocolate Fudge (from veganforum.com)


2 1/2 cups of vegan chocolate chips 1/2 cup of vegan margarine 1/4 cup of non-dairy milk (I use soy as it's the creamiest) 1 tsp vanilla extract 2 1/2 cups of icing sugar



Melt all the ingredients (except icing sugar and vanilla) in the microwave for 3 minutes.

Then mix in icing sugar (make sure there's no clumps!) and vanilla. Put in a 9x9 pan, lined with wax paper. Let it cool and harden in the fridge (almost two hours).

I've only just seen this as well. I've made this one several times with vegan versions of both condensed and evaporated milk. Condensed soy milk is the key to the density but the evaporated soy milk worked too, just not quite as firm. It's been consistently divine either way. Lavender is a nice touch, but totally optional. Enjoy!
