Hi Everyone,

I am new to being vegan but I have been a vegetarian for almost 2 years. I am so excited about going full vegan but I want to make sure I eat properly and not eat to much carbs. Does any one know of how I should be breaking my meals out in terms of percentages of protein, carbs, etc? I really want to make sure as I make the switch that I am doing it properly. Any thoughts?

Welcome kris! If you stick to whole grains, I wouldn't worry about carbs. Avoid the white flours, pastas and breads, and go ahead and indulge in the brown rice, the quinoa, the millet, amaranth, etc. I don't have a ratio, but check the PCRM website which has some outlines. Just google search it. If you like beans, they are great for protein, and dark green leafy veggies are the best food of all for you -- very cleansing, alkalinizing, full of iron, vitamins and calcium. The new cooking can be complicated but doesn't have to be. Check some of the blogs to see what we are eating. Mine is http://midlifevegan.blogspot.com. Good luck to you!
