Vegan Gingerbread Men?

Hi Everyone - I am newly vegan and loving it! I am pretty hard core, so no sugar either and the thing I am having a hard time with this holiday season is not being able to make gingerbread men - any tried and true vegan recipes out there? Thanks for any suggestions!!

I don't really know how you could make gingerbread without molasses...it's kind of the main ingredient, so I really have no idea how you could make them sugar-free...sorry.

Maybe someone out there has a better answer...if so, I'd love to hear it, too! I just don't know what you could sub the molasses with...hmmmm....
