Black Eyed Pea Croquettes

Has anyone tried making Alicia's black eyed pea croquettes? I tried this weekend and they dissolved into mush. I'm not sure what I might have done wrong!

The same happened to me. I used canned beans as I decided to make the croquettes quite spontaneously. Maybe that was the problem?


I would really like to try them again as the taste was amazing.

Hmmm..I used canned beans as well. Maybe they are just too mushy for this recipe. I will use dried beans next and make sure not to overcook them. I will try making them for myself as a test run this weekend!

I made them with dried beans and mine didnt stick together at all. I had 2 other people try to help me and they just fell apart the minute i put them in the oil. So unfortunally we had to put some egg beater in it and then it worked perfectully. I just didnt want to waste it. They were really good though and since I cant stand black eye peas I was really impressed. I will of course try them again one of these days with out the egg beaters.

Dolores - did you just soak them and then blend? No cooking? I haven't tried these, but there have been several posts about them. My understanding from the posts, though it could be wrong, is to not cook them. I don't know if other people soaked them. Since black eyed peas cook so quickly, I would assume that soaking them and then frying them would be enought to cook them? Maybe that's the problem people are having, aside from using canned, or should you still cook the dried beans? Too bad the recipe isn't more explicit since so many have had issues!
