Mash Potato Egg Substitute?

Hello, A quick question.. A friend of mine has told me I can use the water from boiling potatoes and mash potatoes as an egg substitue. I can see it maybe being a bonding agent, but I am not sure that it would work that well, or how to use it.


Anyone heard of this and know what the forula for 1 egg would be?

Hi Caitlin,


I have never heard of using the water, but I have used mashed potato in a recipe in place of egg. Thin the mash potato until creamy with the non-dairy milk of your choice and add 1/3 cup for two eggs. You have to experiment with this, but it helps bind and add bulk to baked goods.
