Returning to Veggies to Refurbish my Body/Mind/Spirit

Good Morning and Happy Holidaze! I am a mom of three teenagers and have decided that I need to get back to Basics in order to keep up. I have never been a big meat eater, but with kids in the house, it's hard to stay away completely. They are all good veggie eaters, so I have taken my own goals and started to cut back on the meats and start building them up with a great veggie/macro diet. I visited a fantastic macro counselor years ago, and when I was diligent with the diet, I felt great, lost a little weight, and was grateful for the basic foods I was ingesting. That was almost ten years ago, and was tough to keep up with small children in the house. After returning to school last year, my diet really took a turn for the worse and I started to feel drained of energy, I became anemic, and my mind was not as clear as I knew it could be. The white flour products, sugar, dairy, and meats were taking there toll on me. I had seen Alicia's book when it first came out, but silly me, I didn't purchase it then. Three days ago I saw it as a new arrival at our library. I picked it up, and haven't stopped reading, reviewing, and memorizing it since. I learned a great deal years ago between the macro counselor and the Holistic Chiropractor that I worked for, but never took the time to put it all to good use for Me. I am turning the corner, and with The Kind Diet to support my return to a healthy way of life, I am looking forward to a very different year in 2011. Please let me know if you all have "family favorite" recipes that are kid-friendly, or good substitutes for the old stand by meals. ~ Peace.

Good for you, Melaura!!! There are tons of recipes available on this site. Also, there are some great books you might look for, like Veganomicon or Vegan Soul Kitchen.
