Polenta with Seitan

Hi Everyone...My sister in law and I tried making our first recipe from The Kind Diet book and unfortunately I am not sure it came out the right way. I know this sounds truly horrible, but it didn't really have much taste to it. I of course ate it up cuz I love veggies...but I am not sure what I am doing wrong...it wasn't as firm looking as the picture and all I can taste is the corn meal...:( so sad. Any ideas? But don't worry...I will still keep trying them out. Go Vegan, Baby!

This isn't the best meal to make for dinner.. but you have to try the peanut butter cups! They're super easy to make and are delicious! For real meals, I'm not a huge cook so I started with some of the easier meals and simple basics, like mixing rice and baked veggies or veggie soup. They're hard to mess up and always come out delicious. Definitely try sautéing some kale with a little garlic, pair that with some flavored rice and you've got a delicious, filling, VEGAN meal! :)

I love the polenta with seitan. Polenta on it's own can be very corn-meal-y (well, that's all it is, really!) so when I make it, I add a ton of seasonings to my polenta. I do this whenever I use polenta and I really like it with this dish. I also load on the veggies, I use many more than what it has in the recipe...basically whatever is in the house! Experiment with seasoning up your polenta, and I'm sure you'll love this meal!
