Hi everyone,

I was wondering what I could substitute for the whole wheat flour in recipes. Also is there a gluten free alternative to seitan? Thanks in advance! Dina

Yes, you can use garbanzo flour, rice flour, or go to Bob's Red Mill and hit the gluten free section. It will give you a number of GF flours. I like Garbanzo bean flour. I just took a great class here in Rehoboth Beach with a chef who is really into wellness and cooking. There is no alternative to seitan that she mentioned in class. She would always tell me what I could eat at class because I do not eat wheat or gluten as I am allergic.

Thank you Carol. I am going to hit the Bob's Red Mill isle for sure :o) I have to stay away from gluten because of my intolerance to it (as a result of Crohn's Disease)... Thanks again!
