I just made the Broccoli Polenta from Veganomican (yum!) and I used the muffin tin version to mold them into cakes which can later be broiled or pan fried. I was wondering how long polenta cakes will keep in the fridge and also if I can freeze them. I'm going to try to get my boyfriend to try them, but if he won't I don't know if I'll be able to finish them before they go bad and I'd hate for them to go to waste! The recipe made more than I thought it would. Thanks!
