Hi! I'm new to the forums and still reading The Kind Diet, but I'm really looking forward to putting the concepts into play in my life.
I currently live in Mankato in southern Minnesota, but my husband just got a job in Edina. So we'll be moving to the cities area soon! There are some good resources in this area, but I think I'll have plenty more once we move in the next month.
I agree with Pizza Luce, The Good Earth and The French Meadow Cafe. Also, check out Spoonriver (next to the Guthrie Theater) and Bad Waitress who even have a vegan chocolate shake. Ethnic foods are always a good bet. Italian is my favorite Broders and Pazzaluna both have great options.
New to the forum and sort of new to the vegan lifestyle. Tried going vegan in 2002 and found it to be nearly impossible since I didn't cook. Skip ahead 10 years and 2 kids and I'm ready to try again! There are so many more resources and products available then when I first tried 10 years ago! Even my local Cub Foods (I live in Forest Lake) has lots of vegan options including several kinds of soy milk, soy yogurt, frozen meals (love Amy's Organic!) and even vegan butter! I bought some soy yogurt, dried apples and soy chocolate milk and my 3 year old and 18 month old girls thought they'd died and gone to heaven. :) Now if only I could convince my husband to join me on the vegan side of life. Any suggestions for that?
