I saw Alicia's book while shopping in December but didn't pick it up until January. Read it all within a few days & felt motivated & excited instantly! I usually only ate chicken, turkey & fish anyway but 2 days before my 34th birthday I decided to make the change. Its been 2 weeks and I'm loving it! I haven't had much dairy either - mostly just cheese if its already in a salad, etc...I'm being patient & not beating myself up if I am not 100%. It is a learning process & this is one journey I'm excited to experience.
So far, after the intial cries of "WHY?!?!" from my friends & family, they've been very supportive even if they don't understand. I haven't made too many of the recipes yet other than the pizza which was delicious.
I find the biggest challenge is finding variety (until I learn more about certain foods) and ensuring I'm getting all of my nutrients. I don't like the idea of taking a multi-vitamin but I'm worried that until I get better at this new lifestyle, I may have to take one. I've also felt bloated & gassy but am trying the chewing technique Alicia suggested - its hard! I'm looking forward to trying 3 different receipes this week.
After a really rough few years personally, this is the 1st time in my life I am making a change 100% for ME and it feels great!! I'm looking forward to talking with and hearing from all of the amazing people who choose to make this change as well :)
Congrats, Brandi!
Very happy to hear you are doing so well. Great job. You are doing the best possible thing for yourself, the environment and the animals. =) Definitely keep us updated on how you are doing!
Best wishes and kindest regards,Jenna (www.theplantrx.com)
