I USED to be a superhero...no time!!

I was a superhero in the summer, for a few weeks and loved it. I felt great!! I've been vegan for about 2 years. I'm in high school and its not easy to be making brown rice and beans every day-in the morning I barely even have time to get breakfast! I'm not sure whether to go full blown superhero again, or just stay where I am. I also recently gave up soy.

Can you make big batches of the staples on the weekends? That way all you have to do to get ready for dinner is steam some veggies?


If I'm in a hurry for breakfast, I cheat and use Arrowhead Mills Rice & Shine rice porridge. Just add water and heat. I top it with cut up pieces of apricots or figs, toasted sesame seeds (I toast a big batch about once a week to have on hand) and maybe some little pieces of an umeboshi plum. Takes about five minutes to make, and if I'm in a real hurry, I put it in an insulated mug so I can take it to work with me or eat it on the go.

Try doing most of the prep work the night before. Cook and big pot of rice (or any other grain) and soak some beans to use for the next few days. You could also make meals ahead and freeze them in single serving to take out and defrost when needed. If your looking for something quick in the morning oatmeal is good. I put maple syrup and pumpkin seeds on mine :) Really good with a piece of fruit too. Good luck with whatever you decide to do. I'm trying to be a superhero as I can too!

Definitely agree here...make big batches! I do a big salad, pressed salad, brown rice / quinoa, beans, pickles, toasted seeds etc and they last most of the week. You do have to be a little organised but once you are in the routine of doing this once or twice a week it should become easy. Breakfast can then be some brown rice / grain porridge using what you have in the fridge with toasted seeds...this is so yummy! Or sourdough bread with tahini and fruit jam for example.


You will be brilliant and if you have done it before you will be much faster at it this time! Good luck :)

I have a digital rice cooker that allows me to preset what time I would like my rice or porridge to be done by. It also cooks veggies and other things in it was well. I usually fill it the night before, set the time for it to be done in the morning, and i wake up with brown rice porridge all ready for me :)

Also, I'll just say that there is a really nice balance between vegan and superhero. Focus on whole foods and omitting the really nasty stuff, like faux meats, sugar, white flour, etc.

I totally agree with Libby. Being superhero/macrobiotic has a lot of flexibility. It really depends on the individual :D
