I've yet to make a tasty eggplant meal-it always come outs chewy, & leathery (which obviously we don't want here:). Any tips or recipes?
Try roasting it and then adding it to your recipes. I made the Tomato and Roasted Eggplant Stew with Chickpeas from 'Veganomicon' last week and it was super delish. But just about everything I've made from that book is great.
