Eggplant recipes

I've yet to make a tasty eggplant meal-it always come outs chewy, & leathery (which obviously we don't want here:). Any tips or recipes?

Try roasting it and then adding it to your recipes. I made the Tomato and Roasted Eggplant Stew with Chickpeas from 'Veganomicon' last week and it was super delish. But just about everything I've made from that book is great.

There's a recipe in "Appetite for Reduction" by Isa Chandra Moskowitz for Eggplant "bacon" that is absolutely divine! I'm also a fan of vegan eggplant "parm" that I came up with a recipe for on my blog: http://veganrockergirl.blogspot.com/2010/10/eggplant-parmesan-comfort-food.html
