Hi everyone - been lurking on this forum since I started the new life a fortnight ago. Just wanted to share what has worked for me in starting this adventure. I decided to go vegan but have been mostly superhero am glad to say. I think it's worked so well because I didn't make a big announcement to my husband and friends. I just started cooking that way - my husband is so lovely but observation is not a strong point and because the meals were so good he hasn't noticed they are different! I kid you not! The good thing about doing it this way is that I haven't had the possibly negative/sceptical comments from anyone, except 'wow, you've lost weight' , 'wow you look good' without people knowing why.
It has been incredibly empowering as I've persevered with the first hard steps but have also proved to myself how easy it is to integrate the change into my life. I love to cook and this has helped as I love the experimental side of it and the new food is exciting. I have Simon Brown's book plus Alicia's and I think they really complement each other.
Two things I've noticed - first 10 days or so I woke up really early and also that I've found it easier not using too many substitutes. In my head I think it's easier to go without cheese, for example, if I don't substitute and ditto for sugar. Anyway, am sure I'll relax with it all in due course and get into some of the vegan recipes too. So far, I love making salads (the ones in Alicia's book are great) and the polenta/seitan casserole was a hit. Most challenging experience so far was being in a London pub with very options but even then they made a really good salad and a bowl of Kale with plain pasta so all not lost. I loved your description that observation is not your husband's strong point. My husband also doesn't really notice a lot of what I eat vs. what he's eating. I asked him tonight if he wanted some of the collard greens. He said he wanted to be healthy, but not that healthy. As we were cleaning up the dishes, he asked me if I wanted another piece of chicken before he put it away. I hadn't eaten any chicken. Like I said, he doesn't notice much.
As I am just beginning this plant-based life, I too am not making big announcements about it. I have to find my way through all the information, recipes and grocery store items first. It's only day 2!
