It's the end of my first full day trying the plant-based life style AND I FEEL GREAT! I don't have that weird, too full feeling I usually have at the end of the day. My lunch was a bit disappointing because I made collard greens and added a can of kidney beans served over brown rice. It was really bland, but tonight I added a bit of white balsamic vinegar to it, more seasonings and a few peanuts...much better. I don't want this to be a phase. I want this to be my new life.

My husband and I used to own a dairy farm and I know the ugly side of raising cows, the sick cows that are shipped for beef, the mothers and babies that are separated a day after birth, the adorable male calves that become veal. We need a better world.

Hi Stella,

Welcome, my suggestion is to get easier vegan cookbooks! i.e. Vegan YUM YUM, The vegan table and color me vegan are great easy cookbooks by Colleen Patrick-Goudreau and I just recently fell in love with "The Crazy Diet", by Kris Carr it's a fabulous jump start. She also co-authored "Skinny Bitch". If your budget doesn't allow go to the library and copy easy recipes. I know Kris Carr's book is 20% off at Barnes and Nobel right now. I hoped this was a little helpful.

Stella, it is great to see someone who has lived in that world and come around to understand that the things that happen to those animals is deplorable. We are so happy to have your here and appreciate the insight that you bring into that world that most of us only know from undercover video. I stick to a lot of recipes from the McDougall diet plan, as they have easy to find ingredients and are easy to make and freeze. Our favorite cookbook is the Quick and Easy one. Good luck!

Hello Stella, Brand new day,for me as well- want a healthier life. We run a horse escue and know how cruel humanity can be. Also grew up on a dairy farm and know the sadness and pain the animals endure. Looking for great recipes and hope to share a bit of my life.

That's awesome. I've been vegan since September 12th, and I finally got my boyfriend to try it, so this weekend we're going shopping for ingredients for the recipes he chose to try. It's exciting! Best of luck to you and yours!
