I'm partaking in my very own 4-week Superhero challenge, which I am chronicling on my blog Kristyna Chantel at http://kristynachantel.wordpress.com. Recently I've made the quinoa with basil and pine nuts as well as the Superhero version of the Crispy Peanut Butter Treats which I loved!
Tonight I am going for the scarlett roasted vegetables and was wondering what everyone else has been making as far as Superhero fare goes.
Is there anyone here trying this lifestyle out?
I haven't been fully Superhero, but last night I made a variation of the quinoa with pine nuts - quinoa with toasted green pumpkin seeds and some lime juice, along with the cuban sweet potatoes and some lightly sauteed and then steamed kale. Everyone really liked it :)
Tonight its black bean soup, which I think is pretty Superhero, not really entirely sure though. Basically black beans, veggie broth, garlic, celery, carrots, a little chipotle pepper....
What is the superhero version of the crispy pb cups?
