In January last year, I impulse-purchased the Kind diet online. After reading it once, I decided to try being vegan for a week. I figured I would last about three days without milk, cheese and eggs.
Now one year later and I am still going strong. I have definititely had a couple slip-ups along the way, but I found it amazing how much better I felt. My hair is nicer, my skin is better and I have more energy.
Today I was published in a local paper that wanted to write on vegan diets: http://www.seemagazine.com/article/city-life/lifestyle/vegan/ and it was so exciting to see. I have also started my own blog partly to track things that I make, but also to help clear up the many misconceptions of being vegan.
This site was a big help to me when I first made the switch. Thanks to everyone on here. :)
That's fantastic Caitlin - congratulations!
It is very cool. In Alberta vegans are not recognized very often (cow town.. beef country etc) It was really encouraging to see a bit of press on it, even in only in a smaller paper. It was also great to hear responses from the article. People have been thanking me for focusing more on what I eat and how it can be a healthy lifestyle and staying away from the more sensitive issues... baby steps... :)
