I'm just reading the book and in the planning stages here. The big obstacle my son loves loves loves his steak! I'm planning to start making more meat free meals starting with ones he is used to(ie beans and cornbread sans the ham bone, pasta w/sauce...he doesn't like meat in the sauce,etc) I'm thinking if I introduce it slowly it will go smoother. We currently have a freezer full of meat which we are slowly using up but decrease serving sizes by adding beans and more veggies. Our real trouble will be w/desserts....i can use other sweetners than white sugar but how to I sub eggs? anywho any tips for making the transition smoother are appreciated!

The slow, gradual approach is right on. I've had great success introducing vegan meals into my menu rotation with rave reviews from the most passionate carnivores.
