I hope someone out there can help me. A few days ago I bought the ingrediants to make the black eyed pea croquettes, but have since let a friend borrow my book. I have the peas soaked and ready for tonight and would really appreciate it if someone would give me the recipe. Any help would be sooooo appreciated! Thanks in advance:)
This recipe was a complete fail. It was way too wet you couldn't even make balls. Also, it was so mushy cooking I had to throw it all out.
Ponchki - did you cook the black eyed peas? They should only be soaked, from what I have read on other threads.
I also posted about this. I used black beans instead and they were cooked and they just dissolved in the oils. I pan cooked the remaining ones and added lime and honey and made bean dip instead!
If you still need the recipe:
- 2 cups soaked and drained black eyed peas
-2T fresh herbs (cilantro, parsley)
- 1T shoyu
- 1t cumin (i used curry)
- salt to taste
--- 1" safflower oil in a pan. cook about 4 min each side.
can someone help me with this? i've now got the soaked BEP, everything is ground up in the mixer..i can't get them to make balls. its wet but not sticky. when i apply pressure to form a ball, water comes out and drips through my fingers, but it doesn't stick together. SO..i'm not sure if i need to add something to dry it out or make it wetter? bread crumbs or liquid? HELP! before my beans go bad. THANKS!!! :-)
Oh NO! I didn't know to use uncooked peas! I cooked them and it was a disaster!
