great seitan recipe ideas??

forgive me if this has already been addressed in the forum, i searched through a few pages under "Cooking Help" and couldn't find anything addressing awesome seitan recipes...
the issue is, that i've made a very LARGE batch of home-made seitan, 3/4's of which is now in my freezer. i'm fairly new to working with seitan and just wanted to see if anyone had some tried and true (and delish!) seitan recipes that i could try out! ps. i've read that seitan can be frozen for 3-6 months-any truth to this?
The crusted seitan in the Kind Diet book is amazing!
