Egg Substitution??

I'm a new vegan and have had great success using ground flax seeds with water as a substitute for eggs in baked goods. However, I'm really curious what to use as an egg substitute for breading? For example, I have a recipe I really want to try where you use eggs to coat acorn squash with bread crumbs and then bake...but what could I use in place of eggs?

apple sauce, banana, tofu, potato starch, corn starch, baking powder and white vinegar, plain soy yogurt
