This is my first month of being a Superhero I have mainly stuck with the superhero approved recipes from the Kind Diet Book, aside from that for me it is a lot of quick and easy whole grains. I often will have rice, beans, with some kale in it. Breakfast is usually some form of oats..

From the book I absolutley love the Clean Mean Burritos and the Thin Mushroom Pizza's With each meal I try to add some sort of greens..

Favorite Breakfasts: soft rice porridge, mochi waffles, tofu scramble, miso soup; I usually try to have a side of plain steamed greens as well

Favorite Lunches: leftovers, nori burritos, rice & beans with steamed greens (I'm so into greens now, I'll eat them cold for lunch!), miso soup w/ mochi croutons

Favorite Dinners: fried rice, thin mushroom pizzas, cuban style roasted sweet potatoes, magical healing soup, and I try to have something like the carrot & burdock kinpira or the arame with carrots & onions or nishme

I also like to have a few of the umeboshi radish pickles with breakfast or dinner. They are so easy to make!

If I don't feel like cooking, my staple meal is brown rice, beans, and steamed greens with gomashio.

Thanks for your responses guys. I'm looking forward to trying supehero. I'm not a junk food vegan by any means, but could definitely use improvement in some areas. If I eat one more dayyyyum burrito...haha! They're too good though! :)

A few perfect superhero days have consisted of...
-oatmeal with dried berries
-quinoa with vegetables and black beans/hummus
-vegetable soup with millet
however it isn't varied enough for me,sometimes I day dream of making vegan enchiladas but it's been too hot to cook in the oven. One day,one day..

Great responses. I was kind of wondering the same thing. Been vegan for two years and now going back to the book to reread it and maybe going Superhero
