My non-vegan mom and brother are coming over. I'm making the Chickpea Piccata recipe out of Isa Chandra Moscowitz' Appetite for Reduction cookbook (so freaking good!) over mashed potatoes, roasted asparagus, and my own vegan version of green-bean cassarole (using a mushroom gravy recipe I came up with, tons of sauteed 'shrooms with garlic, and of course, crispy onions on top!). I may do Alicia's artichoke dip from TKD as an appetizer. Not sure about dessert yet.
The great thing about Easter is its all about spring - and veggies fit into that so well! Asparagus, artichokes, salads - lots of nice choices out there!
