Rice and Beans recipe?

Hey everyone! Does anyone here have a good rice and beans recipe? I prefer to use brown rice and either red or black beans...and I know this is silly for a rice and beans recipe but I am not a fan of bell peppers. I have no idea why but I have never liked them so I would prefer to leave them out.


If anyone has a good recipe it would be so greatly appreciated! Thanks!!

Oooh that looks good! I would have to sub something for the cilantro but I can easily use parsley I'd think. I can't wait to try it! The dressing looks super yummy! Thanks!

1 box wild rice-cooked and cooled, 1 can black beans-drained, 1 mango-chopped, cilantro-to taste, salsa-to taste, juice-to taste (I have used lemon, lime, pinapple and orange, they all work great), green onion-chopped.


I make this often and you can substitute mandarin oranges for the mango, any kind of onion will work. Here's a hint: it tastes yummy the day you make it, but the next day it is amazing!

My fav is brown rice with kidney beans and tons of sauteed zucchini, mushrooms, peppers, onions, carrots, broccoli and spinach. (or any other veggies you like). Add some tomato/pasta sauce and it's super yummy and really filling!!

I am new to all this, but I tried a recipe off of this site called "healthy rice and beans" it used adzuki beans but I'm sure you could do kidney instead. It was super good, simple and quick to make.
