Vegan in Vail, CO

Does anyone have any suggestions for where or what to eat in Vail? I am going to Vail this summer for 5 nights in July. We are staying in Vail Village and I have yet to find a restaurant online that has an actual vegan entree. I'm sure at a fancy one I can ask the chef. Last time i traveled with family like this we had Ruth's Chris make 2 vegan meals. There does seem to be a starbucks... so I guess I can have oatmeal if i'm starving.
Also, I have been looking for a health food store or something and I only found the City Market grocery store (which I have never been to so I don't know about their selection). I would also appreciate ideas for easy lunch ideas that you can pack for a hike or make in your hotel room (I think we migh have a limited kitchen). I tend to cook meals for dinner and grab lunch out so i'm not even that good at packing vegan lunches. My ideas so far (which already bore me) from a standard grocery store are pb&J, avacado/lemon, cereal/soymilk, salads with canned beans and granola, dried fruits, nuts, instant oatmeal, bars, etc. Any suggestions would be really appreciated.
