Food Storage

So... I've decided go go vegan as of last weekend. My question is about food storage since it's just going to be me... Tofu for example, doesn't last long and I really want to only eat it a couple times a week, and you can't freeze it unless you want a different texture. Can you freeze cooked tofu without changing it? If you make something out of a silken tofu, can that be frozen? Are there things I definately shouldn't eat? Ideally, I would like to make a batch of something and then freeze it in portion sizes and pull it out as needed, but I'm not sure how well that works with all the fresh veggies and grains and such.
