Help with bean croquettes!!

I tried making the Black eyed peas croquettes. I get that they are similar to falafels. But I misread the ingredients and bought black beans instead of black eyed peas. I also used canned beans, because I do not want to be spending 2 days soaking and cooking beans.


So...when I made them, they were easy to shape but when I put them in the oil, they just kind of dissolved. It was weird. Luckily I only put a few in...so I poured out most of the oil and tried pan frying them rather than deep frying them. Well that didn't work either. the outsides got sort of crispy but it was super pushy. It never firmed up or got that crust on it.


So...what did I do wrong? Can you only use Black eyed peas? Are they supposed to be cooked? It just says to soak and drain them. I'm so confused!


I did however discover a new recipe: bean dip! lol.


- black beans with soy, cilantro, curry powder cooked in a pan and then add lime and a touch of honey. eat with chips or pita or put in tacos or spread on toast, etc. :-)


I would love to make these for my family, can someone help me do it right!!! THANK YOU!

Hi Jacqui, the problem was the canned beans, they are not supposed to be cooked just soaked over night. I had this same problem trying to make chickpea patties, what a mess. put them in water right before you go to bed and they will be ready for you the next day. Very Important: when you put the bean mixture in your food processor, pulse until mixture is well chopped but not pureed. the more gooey to mixture the more it will fall apart in the oil. Good Luck you can do it.

Hi thank you! That's very helpful. Can you tell me what black eyed peas taste like? i'm grew up some in the south and the only way i've had it is with bacon fat in it...and i hate bacon fat! the taste really grosses me out. so, i've not had it since.


my favorite bean is the black bean. which beans are the best? i saw yesterday on jaime oliver's show he made something similar with broad beans - bright green giant pea like beans.

That is so funny, my father is from the south also and he used to make us eat "wilted lettuce" which is lettuce, onion and bacon drenched in the hot bacon fat. yes that also was some nasty stuff and he would make it on holidays like it was "special" food. haha. But don't let those awful childhood memories deter you. I am new to beans also but I have tried quite a few kinds already and my favorites are the black bean, kidney bean, the adzuki bean and I also really like soybeans. the only time I had the black eyed peas was when I made the croquettes and they were good, I just wasn't a huge fan of the barley malt syrup it tastes to much like molasses for me. I put straight up stone ground mustard on mine and let my husband eat the syrup. Go ahead and give the BEP's a try at least you've only wasted a buck or two if you can't get past the memories. sorry I'm not good at describing the taste but I can tell you they won't taste like fat!
