I've tried many of the recipes in The Kind Diet, and am wondering if anyone here has been able to make them more kid friendly. My son loves vegetables and fruits, but doesn't seem to like the texture of whole grains and tofu. He also loves seaweed (how great is that?!), but my concern is getting enough protein into his diet.
For now, I am the only vegan in my household/family, although my son seems to have been born a "natural vegan." He has always preferred a vegan-based diet to a meat-based one, devouring veggies and completely ignoring the animal carcass on his plate. I only recently became vegan, finally making the decision about two months ago. My husband is not quite ready, though. So for now, we supplement our son's diet with some animal products to ensure that he gets enough protein. I eventually want to switch him to a 100% vegan diet, but first I need to come up with whole grain recipes that he'll eat, and maybe a few tofu-recipes-in-disguise. ;)
I am aware of the high protein content of quinoa, and tried Alicia's Quinoa with Basil and Pine Nuts. But alas, my son did not like the "popping" texture of the grain! He doesn't seem to like the pasty texture of legumes either. I and my husband both love all the recipes I've made from Alicia's book (vegan and superhero), but I'm wondering if anyone has any suggestions or tried any variations to the recipes to make them more palatable for young kids.
