Vegan traveling to Cancun!! Need Help!

My boyfriend and I have just booked a 7 night all inclusive package at the Gran Melia in Cancun and we are so excited!! I have emailed the hotel regarding vegetarian options on the menus but I'm still waiting for a response. Does anyone have any suggestions or tips for finding vegetarian options at an all inclusive resort in Mexico?? All help would be appreciated!!
