Mochi help!

I've been vegan for about a week and a half and I've tried lots of new things and have loved most of them! I am having a little trouble with the Mochi though... I bought a plain one and also a cinnamon date one I think it was. I tried following the instructions on the package for the cinnamon one (cutting into squares and baking) but I don't think they came out like they were supposed to... they puffed up but whatever was supposed to be in the middle oozed out the side. Not only did it look bad, the texture was very plastic-like. very unappetizing... I still haven't made the plain one yet, but before I did, I just wanted some guidance... when I bought it, it was in a freezer, but I put it in the fridge to thaw it out... was I supposed to leave it in the freezer?
any guidance would be appreciated. I hate wasting food.
I've actually never seen them frozen before...I didn't know you could freeze it! When I make them the middle also oozes out, and I definitely don't think the texture is for everyone, but I love it. Maybe try the plain one pan-fried, like in TKD recipe section...it's delicious that way, and the texture is a little different than baked...
Thanks Dani! I will give it one more shot and try the recipe in the book. I also saw the mochi pancakes in the breakfast section... It may just be that Mochi isn't for me. Either way, I'm glad I tried it. :)
