Gluten-Free Vegan ?

Hi all,


Is anyone eating a gluten-free vegan? If so, are there any challenges, great recipes or ideas to send along? I have been vegan a few times before, as well as vegetarian. Now I am committing to a gluten-free vegan diet. So far it has been wonderful health-wise. I feel so much better, high energy, less headaches, feeling fantastic

I recently began eating gluten free as well. It was a suggestion from my trainer because I had gotten very sick but couldn't figure out the source. He suggested I cut wheat from my diet and it has made all the difference! I eat very clean for the most part and I feel great.


As far as recipes and ideas are concerned I'll send you to some of my favorite blogs :) I always like to just play in the kitchen and create new combos with staples like rice, quinoa, veggies, fruit, beans, etc. I try to stay away from gluten free processed things because I'm trying to stay as clean in my eating as possible so I can't give you recommendations on that end but I'll include my blogs as well so you can see what I've been eating. The gluten free has only been recent so my older posts will contain wheat but you may be able to adapt them into a gluten free meal :)

I've been a gluten-free for 6 months and vegan for 3 now. I can't say it's that difficult. You just have to be creative! I have a good cookbook called "The Gluten-Free Vegan" by Susan O'Brien and I recently purchased the most amazing baking book called "The Allergen-Free Bakers Handbook" by Cybele Pascal. Being the avid baker that I am, transitioning to baking without gluten, dairy, and eggs was a bit of a challange. This book makes it easy, and everything I've made from it has been delicious! A website that I like to use is http://glutenfreegoddess.blogspot.com/. Not everything on her site is vegan, but she does have some good options for meals and for baking. Here is a link to one of my favorite recipes. My husband begs for it at least every other week. I like to use almond butter instead of peanut here too. http://www.glutenfreediva.com/2011/02/spicy-sesame-peanut-noodles-i-won-the-mematastic-award/. This lady is only gf, but she has a few vegan recipes.


Hope some of this helps. I'm still trying to learn some myself, but I'm at least to the point where I don't have to think about it as much.

Thanks ladies! I have lots of great references to go on now :) I scored big this week getting gluten-free vegan coconut cookies on sale, $2 Canadian for a huge box. Yum!

I have been a Vegan/Vegetarian for 2 years in June. I just got blood work and have to make some adjustments to my diet with my natural doctor.


My question to the group, if someone is starting from scratch, where do they go?


Who do you believe? Gluten? Vegan? Supplements? Tell me, why does life have to be confusing?


I guess as life goes along it can be simplified. I appreciate the feedback.
