Ok I am officially hooked on this stuff. I had not had Alfredo sauce in quite some time, probably about a year and a half at least (since before I went Veg) and I used this MimicCreme stuff as a sub in my alfredo sauce recipe. OMG. It's amazing. I had been making homeade Alfredo sauce since I was 15 and I was constantly searching for a good substitute for heavy cream. I used the sauce on gluten free rice pasta and smothered my broccoli in it too. Delicious. I will be buying this stuff on a regular basis.

and the recipe I used was a combo of one on the site and my own personal one. Earth Balance made a great butter substitute too, I had some sticks laying around from baking.

Ok I used 1/3 cup Earth Balance (the sticks make it really handy)

And 2 cups of MimicCreme and a few cloves of crushed garlic .

Melt the EB in a skillet over med/low heat with the garlic cloves and then slowly whisk in the 'creme'.

I eyeball other spices and the garlic so I couldn't tell you my exact measurements. I added parsley and basil as well, and fresh ground sea salt and pepper as it was cooking. I'm bad... I taste food as I cook it to see if it needs tweaking or not , haha.

Did you just use the regular unsweetened MimicCreme?

I haven't been able to find the regular Mimic Creme anywhere by me! Just the Healthy Top. Where do they keep it at Whole Foods/Wegmen's?

I think I've found "MimiCreme" in the baking isle. If you as costumer service I'm sure they can be of assistance.

I haven't tried it b/c of the high fat content but I sure will one day!
