What do you do when you can't handle the smell or taste of bell peppers (any color) and yet they hold good quality vitamins and minerals needed by diabetics and vegans (much less anyone else)? If I can hide it in a soup, I can handle it...but some recipes I have come across that I would love to try - FEATURE the blasted things...like Vegan Lox and Bagels from the Vegan Vittles Cookbook. :(
