Vegan with Food Allergies

I just came up with an amazing recipe for wheatless vegan pancakes, you can check it out on my blog at http://jessicasteinberg.blogspot.com/2011/06/wheat-free-rice-flour-free-vegan-5.html. I find that most vegan recipes will substitute whole-wheat flour, nut flour, or rice flour in recipes, and I'm allergic to all of them! Does anyone have experience cooking with alternative types of flours? I'm just learning.

Hi! I have nut allergies too so it can be difficult. I can eat whole-wheat flour though but I tend to use spelt flour as it's meant to be easier for the body to digest. I wish I could make the desserts in The Kind Diet that call for peanuts as they look so yummy but unfortuantly I cant :(

I am vegan-esque because of my allergies! can't eat dairy, eggs or brewer's yeast. Also celiac runs in my family, so no gluten. also several types of beans are on my naughty list, as well as avocado and alfalfa. my diet is so complicated :(

Jessica- I've had great success cooking with bean flours... are those okay for you? Garbanzo-Fava bean is exchangeable cup for cup with rice flour, and Bob's Red Mill's All Purpose Gluten Free flour is bean based as well- cup for cup with normal flour. Bob's Red Mill also makes gluten free Oat Flour.


Other options include (and I have less experience with them): Quinoa Flour, Millet Flour, Amaranth Flour, Coconut Flour (this one's delicious).


Most recipes will combine these fours with starches like potato starch and arrowroot, to get nice fluffy results in baking. Just a note, bean flours often have a bit more pronounced flavour but I'm used to it now!
