Although I know there's a ton of great vegan food out there, I've had the best luck with real food meals that just happen to be vegan. Flip through your cookbooks and you'll be amazed at how much in there might already be vegan.
I've found LOTS of great recipes from both vegan and non-vegan cookbooks that don't use a lot of food substitutes or other "foreign" ingredients that my non-vegan husband, family and friends love to. Feel free to stop by and take a peek:
I found a really good meal that anyone can enjoy is simply replacing the ground beef or turkey in stuffed peppers with a hearty bean (white beans or black eyed peas are both good) and using brown rice instead of white. It's very quick, very easy, and more filling than the meat.
