Vegan in Central America

Finding delicious edibles as a vegan in central America can be a challenge, especially out in the country side. There are however some options. For example at Rancho de Caldera, a TripAdvisor top rated green kind eco-resort in Boquete, near the Costa Rican border. Their on site restaurant, Madre Tierra is run by Masterchef Craig Miller, who can and does prepare vegan and vegan friendly dishes on request.
