Vegans in Central America don't always easily find suitable food, especially outside the cities. There are however some options, like Rancho de Caldera, a TripAdvisor top rated Green Globe certified eco-resort in Boquete, near the Costa Rican border. It is totally off the grid all year, on solar power, even their swimming pool is chlorine free. The hotel is endorsed by the Rain Forest Alliance and Sustainable Travel International. Masterchef Craig Miller, who runs the resort restaurant, prepares incredibly delicious vegan friendly dishes on request. Pictures and more info at http://www.ranchodecaldera.com
