What dishes are in your weekly rotation?

My husband and I have a pretty solid rotation of tofu stir fry, veggie burgers, black bean burrito bowls, veggie pizza, veggie pasta and that's basically it ... what are your weekly dinner staples? I'm desperate for some new ones that are quick to make and yummy.... thank you!

One of my favorites, and my husband's favorite dinners (and he is not veg by the way) are Crispy Cajun ChickPea cakes. I found them on Vegan Dad's blog. Just google Vegan Dad, and you'll find it. They are delish, and even yummier as leftovers on a wrap for lunch the next day. I serve them over a big bed of salad greens, and top with a little dressing of veganaise, lemon juice, hot sauce and chipoltle spice. But, really you could use any kind of dressing you like. So good. Check out his site. He has lots of meal ideas. His Sweet Scones are also a big hit with my non-veg extended family.

I like to change things up often but here is an idea of what we do weekly:


Soup night (enchilada/tortilla soup, lentil soup, broccoli soup)


Salad night (a kitchen sink approach with beans/nuts/fruit/veggies/grains and lettuce- add your favorite dressing)


Sunday night I typically make a large meal that serves as leftovers later in the week (chilli, shepards pie, enchiladas).


Pasta night (pasta with roasted veggies, thai peanut pasta).


Risotto with roasted veggies and a side of cannalini is a regular.


Burger night with a side salad (sometimes carmalized onions, mushrooms, avocado, salsa... we change up the toppings).


Each week I try to make a new recipe from some of my favorite cookbooks (veganomicon, skinny bitch in the kitch, vegan on the cheap).


I hope this helps- it has some structure to it but allows me to change things up and keep it exciting.

1. lentils, quinoa or brown rice , sauteeed greens and spicy field roast sausage


2. veggie spaghetti (mushrooms, zuchinni, squash etc - sometimes I cut up italian field roast sausage) and salad


3. slow cooked lima beans, vegan cornbread, sweet potato and sauteed greens or green beans


4. # 3 with black eyed peas


5. lentil tacos!


6. veggie pizzas


7. vegan red beans and rice, sauteed greens


8. potato and kale enchiladas


9. jamaican black beans with rice, fried plantains and salad with citrus vinaigrette


10. potato leek soup with vegan caesar salad
