I also like to add quinoa to all kinds of stuffed veggies (just add 1/2-1 cup of cooked quinoa to your stuffing recipe): spaghetti squash, bell peppers, mushroom caps... You can also mix it in with millet (as an alternative to a side of rice). They blend very well together in both texture and taste.
One of my favourite salads right now is a kind of taco-ish one with quinoa. Cook the quinoa with black soybeans, corn and taco seasoning (or whatever spices you make your tacos with) then pour over green salad with mango, avocado, green onion and some salsa.
