Help - Dinner Ideas!

Does anyone have any quick and easy dinner ideas? I feel like I am making the same dinners over and over. I have looked at a few sites for ideas but nothing appeals to me. Thanks!

You should check out the recipe for tempeh enchiladas in the recipe section of this site. They are soooo good and so easy to make . . . pretty quick too! My husband and I loooove them!

My hubby bought me the Everything Vegan cookbook. It is a wonderful beginners book. Also I find most of my "before" recipes can have easy substitutes.
