Hi - I just joined and love the book. I really want to become a vegan (have been veg. for years) Have 2 kids, 4 and 7, and not sure they'd be willing/able to eat what I would make - espec. dinners! Anyone else out there with children eating vegan and have any ideas for kid-appealing meals?? :)))

I find that with kids (like my husband) if you don't tell them what is in it and it is tasty they will eat it. Gardenia makes a great soy "chicken" nugget.

Getting started I found it easiest to take the recipes I already know and make substitutions. Since you are already veg then you really just substituting the dairy. Soy milk is thick like regular milk. I use that is all my baking and cream recipes. Butter is an easy sub since now there are so many oil based butter sub. Cheese is the only hard thing. I have yet to find a cheese sub I like.

My hubby got me "The Everything Vegan Cookbook" which I find wonderful for substitutions. It is a lot of everyday dishes with some tweeky.

Good Luck.

I grew up a vegetarian, it's all I knew. I am now a teenager, and trying to do it again. Kids are young, they can be tought how to eat healthy food! Hope all goes well! :)
