Coconut Oil

I heard that it's healthier to use coconut oil in recipes like cookies, pancakes, etc. because although it's higher in fat than normal vegetable oil, it's a fat that can be easily broken down by the body. Is this true? Can someone give me some insight??

I have been doing alot of reading on the amazing benefits of coconut oil! :) There is a great book called The Miracle of Coconut Oil by Bruce Fife....super helpful! From my understanding, coconut oil contains medium chain fatty acids, which are more helpful to your body. It is also one of the only sources of lauric acid which is a tremendous immunity booster :) Check out the book, it is great :) xo

thanks, i definitely will! so can it just be used as a substitute for veg oil? is it that simple?

Coconut oil is really yummy on spinach salads! It isn't too sweet,so I don't suggest using it as a sweetener,and it's definitely an acquired taste.

Coconut oil stays stable at higher temperatures. It doesn't break down like veg. oils do. Also, its not refined.
