Using cucumbers

It's the time of year where I live, when cucumbers are a surplus for everyone. When I don't want any cucumbers to go to waste, and I've already got three giant jars full of cucumbers for pickeling, what do I do? Are there any recipes that call for large quantities of cucumbers?

I don't know about large quantities of cucumbers, but I recently realized grated cucumber is delicious on chili and in tacos/tortilla wraps. I also like to add it to my potato salads (along with blanched radishes). The French also served "braised cucumber" as a side dish (and it's delicious!!) Hope this helps use a couple of them here and there...

Thank you so much, I've tried the "braised cucumber" as part of dinner tonight, and it was delicious! It's not very often you find a recipe for cucumbers that isn't a salad or sandwhich, and honestly, I wanted more variety than that, it's a great help.

I like to make a superhero macrobiotic side dish with them. I soak hijiki seaweed then toss it with corn kernels, matchstick carrots, sliced cucumbers (1/2 in. thick), and peppers. Then I marinate it in sesame oil, wasabi powder, tamari, and brown rice vinegar. I top it with toasted sesame seeds.
