My brother-in-law was the one who gave me The Kind Diet for Christmas two years ago but they bought it for themselves too shortly after (even though they're not veggie) because they loved the look of it!
Last Christmas when I went and stayed with them they made me the lentil sweet potato stew as the turkey replacement in their Christmas meal and it was a dish I had not yet tried from the book. Well, I was hooked! It's now a staple on my six-week meal plan and I LOVE it. I blogged about it here: http://guiltlessandgourmet.wordpress.com/2011/07/03/thursday-june-30th-2011/ on my old blog.
Soooo good, so low calorie, so good for you (all those spices do wonders for your health!)
This stew is wonderful and so healthy! I also made the cornbread to serve with it. I didn't have whole wheat pastry flour, so I used cake flour instead; and even though they weren't as healthy, they were wonderful! Thanks Alicia!
