My brother-in-law was the one who gave me The Kind Diet for Christmas two years ago but they bought it for themselves too shortly after (even though they're not veggie) because they loved the look of it!
Last Christmas when I went and stayed with them they made me the lentil sweet potato stew as the turkey replacement in their Christmas meal and it was a dish I had not yet tried from the book. I had this for dinner tonight along with the cornbread muffins. It was amazing! I could not stop eating it! :))

This stew is wonderful and so healthy! I also made the cornbread to serve with it. I didn't have whole wheat pastry flour, so I used cake flour instead; and even though they weren't as healthy, they were wonderful! Thanks Alicia!
I want to make something like this today-I got drenched with rain on the way to my 2 mile run,it's still cool.Going to make it with azuki beans and yam,yum.
