BEATEN EGGS SUBSTITUTE

does anyone know how to substitute beaten eggs in baking recipes. i've tried super-creamy applesauce and silken tofu, but nothing gives the cakes the "fluffiness" of non-vegan version...any ideas?

My all-time favorite for fluffy cakes/cupcakes: Whisk 1 tbsp ground flax seeds + 3 tbsp water + 1 tbsp neutral tasting oil (vegetable, canola or safflower) + 1 tsp baking powder + 1 tsp potato or corn starch (= 1 egg)

thanks! i assume you don't add additional baking powder if the recipe asks for it? what if i need to substitute three eggs - wouldn't three tsp of baking powder be too much for 1 - 11/2 cup of flour?

It does seem like a lot for just a cup of flour, but then so do 3 eggs... What are you making?

apple cake. the original recipe calls for: 3-4 eggs, 1 cup sugar, 1.5 cup flour and only 1 tsp of baking powder + some other ingredients. the consistency should be that of thick liquid to pour over chopped apples and pears...
